Subie! 914 engine has been done (T4 VW) but it has fitment issues in a Thing unless you convert to an upright fan. Subie is a bit smaller and more powerful :)
And if that was any closer my wife would be hitching up the trailer right now, she's been on me to buy her one for awhile now.

I wouldn't mind a Subaru engine in it. It just wouldn't sound right with a watercooled engine...it would sound WRONG, the right kind of wrong.
