In that case couldn't you just find a regular 5-door hatch and swap in the turbo drivetrain as well as the manual bits?

Yep, absolutely!
The turbo ones don't really command much premium over the LXs, though. I wouldn't say it's worth it unless it was the world's cleanest LX.
But to keep it easy... you would just swap transmission, harness, and dump the turbo bits on the LX motor. It'll be faster than a GT.

My friend had a 91 hatch non-turbo auto when i got my license, I loved it for some reason.

I've never seen a Hatch/Touring in person. They are very rare.
