Nothing wrong with learning on a new GT. You have to learn on something and traction control is there to save it if you accidentally dump the clutch.
Insurance isn't worth it in my opinion though. Throwing money away. An EcoBoost would/should be much cheaper to insure at your age. Once you get as old as me, GT's are cheap to insure.
