A couple of mine from the 80's:
Sammy Hagar - "I Can't Drive 55"
Linked for those who weren't around when MTV only showed music videos.
Phil Collins - "Something In The Air Tonight"
Only because of the original Miami Vice TV show and the sequences filmed with the Daytona (replica I have always assumed, but cool nonetheless).

Silver Machine by Hawkwind.
Pretty much anything by Cactus.
Monster Magnet has a ton of good "in the car" music.
Fu Manchu has a ton of So-Cal car oriented tunes. Their CD covers are generally pretty cool also.

Daddy's Cup - The Drive By Truckers
http://www.youtube.com/watch?v=McW2NwWtR9E
Every Saturday, he'd take me out to the garage
He'd take an empty bucket and fill it full of engine parts
He's sit me down and pour em out in front of me on the floor
I'd have to tell him what each one was and what each one was for
We'd jump into the car and go down to the race that night
He'd tell me what each driver was doing wrong and what each one did right
He could always pick the winner before they ever took a curve
3 might have the car but 43 has got the nerve

I have California crossing in the basement shop playing now. There is another band called Slant Six that is OK for driving although obviously recorded in a garage.
