so its cold here, and its going to snow/ice/slush in the very near future and the miata is my DD....the question being, can I use the spray de-icer stuff on the back plastic window? (without it melting/deforming like a plastic army guy under a magnifying glass)

I have no idea. Try it on someone else's Miata first :)
Nice trick for the rear window - stick a piece of cardboard on it when you park the car, keeps the snow/ice off it.
