There is no such thing as a "good" radiator probe. I haven't seen one that didn't have an extremely wide operating range, meaning set it to turn the fan on at 210 and it won't shut off until 160 or 170 or some other unattainable goal.
I just use a switch. Problem solved.

I agree with Raze, the RPM-triggered fan is a really cool idea. How do you wire that up? I would assume it takes some form of logic circuit?
you can buy rpm switches that have programmable rpm limits for not too much money- i don't see why a shift light controller couldn't be repurposed for something like this..
Why bother with an RPM switch...all you car about is that it doesn't get hot, right? If the engine isn't boiling hot (literally), no need to cool it off. If you have a temp switch, you'll never have to worry about a driver forgetting to turn on a fan.
