So after hopping underneath my car, I noticed my aftermarket springs (Eibach) have quite a few dead coils, meaning that they spring looks partically compressed. Is this a normal thing?

Depends on the application. When I set up my IT prep 1st gen RX7, the rear springs came with, IIRC, 4 dead coils. That was so the coils could be cut off to adjust the ride height yet not affect the spring rate.

Those coils are only dead when you're on level ground. Let's say you do this...
...the coils uncompress and keep your spring in its seat.
(Note: I'm not saying they engineered your springs to allow for sweet jumps, just that dead coils aren't always as dead as they look.)

It's very common on a progressively wound coil.

I laughed for like 10 minutes at that!
