Can anyone tell me of any OEM HID Projector light setups that might be appearing in the boneyards?
bonus points to low cost and ease of removing entire ballasts/bulbs/etc

The Acura TSX HIDs are extremely popular for retrofits because they have great optics. The first gen cars are 6 years old at this point and should be showing up.

BMW have had HIDs since the late 90's. It was an option back then, but was available. I don't see many newer BMW's at Pull-A-Part though. You might try trolling Ebay or bimmer forums til you find a deal.
