Turning the fan on, defrost, hot or cold, doesn't matter, fills the cabin with air that burns the nose and eyes.
Heater core? Or do I have an exhaust leak right at the intake?

The 1st gen Neons had a similar problem, it was mold forming in the vent system. Solution was to spray it down with a Lysol type product.

Early WRXs had a problem of leaking fuel at (near?) the fuel rail in cold weather that resulted in a raw gas smell in the cabin. So check that all your fuel hoses are tight?
Hatchback? Rear seal for hatch can let exhaust into the cabin.
Oh, btw my escort has a nasty exhaust leak at the manifold, and it only effects the air conditioning if I'm not moving. Likely not an issue.
Not a hatchback seal issue because I can drive all day with the windows up and be fine. As soon as I turn the heater on its like a gas chamber.

My father had an Escort with mold problems as well - if the stink smells organic, it's probably what you've got.
Ive had cars try to put me to sleep w/ exaust... but burning sounds like mold.
Try the spray. If that doesn't work you may have to pull the HVAC box.
