just think how much more exciting that would be if they still did the old school GrandPrix starts where the drivers have to run up to the car, strap in, start the car, then go..

You are thinking of the old "Le Mans" style starts that were once the norm in sports car racing.
IIRC, the last time this was used at Le Mans was 1969, and it quickly fell out of favor everywhere else. Sometimes, the drivers would not bother to strap in at all, so that they could get away faster! Of course, this was after they bothered to include safety belts
