Because when drag cars get that fast the cages become ridiculous. The driver literally cannot turn or see anything beyond straight ahead, so somebody has to guide them back to the line (also keeping the tires in the best groove). In really fast or complicated cars things also have to be checked or adjusted. The NHRA Top Fuel / Funny Cars have a throttle stop for burnouts that's mechanical and has to be removed at the line for example.
I've driven a low 9-second car, and I immediately figured out why those people are needed. Gramps said his dragster (7's @ 180) was much, much worse. He said it wasn't as bad as the alcohol funny car though, that thing was ridiculous.
