For the moderately Mustang savvy, the fox chassis technically is '79-'04. SN95s were STILL fox chassis cars.
And, yes, all fox chassis cars with manuals are cable clutch.

Is there a way to bolt them to a GM 2.8?

I'm sure there is, considering that GM also used the T5 in the Camaro. I'd assume it would be as simple as getting the Camaro 2.8L bellhousing, and the Mustang clutch stuffs.
Spline count might bite you in the ass, though.

Not entirely true. The Thunderbird and Cougar were fox chassis for awhile and the 87-88 Turbo Coupe used a hydraulic clutch setup. All other fox-chassis manuals were cable clutch including the 83-86 Turbo Coupe.
Fox is 79-93 Mustang, the slightly revised SN95 94-98 Mustang, and the New Edge 99-04 Mustang, plus the Fairmont/Futura/etc, and the extended length fox on the 80-82 Thunderbird and Cougar and again for 83-88 Thunderbird and Cougar, and the Lincoln Mark VII.

Oh, why not just use the Camaro V6 T5 including hydraulic clutch? It's not that hard to convert cable pedals to the hydraulic unit.

I wanted to use an S10 T5. I was just seeing if there was an easier way. I don't know how to convert it and I really don't want to pay someone else to do it.

Cable clutches have inherent problems, they break frequently which is why most Mustang guys change those to hydraulic.
My S10 has a hydraulic set up for the T5.

What transmission used does not really matter. The key is having a bellhousing that will bolt to your desired engine and provide a mount for your desired transmission while having an external actuator. Now, the actuator can be a bolt-on slave unit for a hydraulic setup, can be an arm mount for a mechanical lever type or a cable mount for a cable operated unit.
So, you have a gm 2.8v6 and you want to use a t5. Regardless of a WC F-body t5 or an s10 t5 (or a saginaw or a muncie or a t10, etc etc) the actuator type on the bellhousing is the key. All those transmissions will bolt up to the same mount pattern...but the key here is what vehicle you are putting it into and what setup is in that vehicle.
So...more info.
- what vehicle?

The T-5 from the f-body has a angled mounting in some years which might cause some trouble. It also has the torque arm mounts which can cause trouble when using a shifter other than the original.
Don't forget, Ford T5's use a different pilot bearing and different centering ring for the bellhousing

S10 would be the best for shifter location. How would I use a cable clutch?

Seriously why cable, most people change these to hydraulic for a reason, just use the Camaro master and slave, by the way my S10 is a 350 with T5

Monza bellhousing (1975-1980, also skyhawk, sunbird or starfire) has cable clutch provisions but I'm not certain of the 2.8 bellhousing pattern. Is it the same as a smallblock?

is the 60 deg v6 pattern the same as a buick v6? I suspect not since the buick is a 90deg motor...but I have no idea.

No, Buick V6 is B.O.P. pattern, no relation to later GM products.

Early S-10 (like early 80's) use a cable operated clutch on the 5-speeds. Not sure if it's a T5 though. Popular upgrade on Opel GT's because of the cable operated clutch.
