Can you bolt on a 16valve head to an 8v block? Or should I just boost the bejezus out of the 8v? Or would the hot ticket be 16v and boost? Realized I need more power at the challenge. Much More power.

16v head onto aba block is a common swap for boost, it does require a little fiddling but it's still cheap and easy. Compression does end up being a little low for non-turbo applications.
Might be simpler to just ad another engine.

The short answer is, if you want to go N/A, find a junkyard Passat and put a 2.0l 16v in it. If you want to boost it, stack some head gaskets on a stock 16v or do the ABA/16v hybrid. Or just use E85 and Megasquirt it, and boost the crap out of what you've got.
