Thanks for the offer, but it now seems I'm dealing with a known bug in version 10 of the software.

I once had some problems like this but it was as simple as the visible layers being bojangled.
Basically, I could view the raster, but the program didn't include it in the export/print.
With all things ArcGIS, make sure not to over analyze the problem, sometimes they are more simple than you think.
Other times...they will be the bane of your existence.

Problem solved! (using this workaround: http://support.esri.com/en/knowledgebase/techarticles/detail/30753 ).
My first instinct was to panic and over-analyse the problem
. Started messing around with my coordinate system, thinking that was it.
