What about the regular 'Stang GT with appropriate upgrades? DLC cars would limit availability for some folks.
Since it's a long race that's bound to be affected by attrition (and require a pitstop), maybe a "run whatcha brung" format with a maximum performance index would be easier. After all, first place and last place have the same cash payout.
