Cannonball is great fun. There's a French movie called Girl Cut in Two, has the same French detective guy from the Transporter movies playing a writer. I wouldn't say it has chase scenes, but it does have some cool scenes with one of those old Honda coupes, one of these:
Its silver and looks great i the movie. Not a bad movie, either.

I'm gonna throw in "The Driver" (1978). Nobody actually has a name in the movie and there's an awesome chase scene with a 2nd Gen Firebird being chased by a C-10 Chevy Stepside with a 3-Speed Column shift.

Brewster McCloud has a surprisingly good chase involving a 70 Camaro, 70 Roadrunner and a Gremlin.
