After one of you deviant's posted the link to bacon explosion I started craving it. On our way to the Gator game yesterday we decided to make it today after the autox. Made the log, threw it on the smoker for about three hours, then in the oven for another 30-40 minutes, and wham declisiousness. One of the guys is gonna post some more pics in a few, his g/f just got back from out of town so he might be busy for the night, but I'll post more pics once he uploads them.

I love bacon, I mean I really love bacon, but looking at that makes my heart hurt

Anyone remember that guy who went for the world record of most raw eggs eaten? (drank, really) Just as he finished he had a heart attack and all the dummies around him just kept cheering while he's on the ground.

I don't think it would be that bad, actually. Think about it, you aren't eating more than one or two slices of it. How is that any different than a sausage patty? Plus, cooked on the grill for a long time, a lot of the fat would probably be burned off

What is that? Just bacon or is it wrapped around something?

I wrote that assuming you'd be eating the whole thing. Good point about the fat being burned off though. I'd probably say the same about eating a whole sausage patty of that size too, though. On the other hand, a couple slices wouldn't be too bad

While the last few have been about bacon explosions, they aren't really reposts since they are about different explosions. That would be calling every miata thread a repost.

we did bacon wrapped around some italian sausage meat, some peppers, and cheese. Next time we are gonna make one as a breakfast log and throw some eggs in there. Or a bbq dinner log with some pulled pork, bbq sauce, etc. These were just tests, but yea you really maybe only eat 2-3 pieces of bacon all in all and most of the fat is burned off by smoking it.

So, does it actually taste any good?

I was thinking about using the sausage in the inside as well as a turkey breast to suck up some of the pork fat. We are going to eat it during deer hunting.

My son had a piece of the leftovers, and said, 'that is the perfect taste'. It was really good, better than I could have imagined. If I can describe it, it was like a smoked pork butt/shoulder, stuffed with hot Italian sausage. Since all the fat, and grease was cooked out, the sausage was that much better

More bacon is more better. The wife's new favourite.

Jalapenos stuffed with cream cheese, wrapped in bacon, and baked.

Of course, there's cheese, so I didn't eat any.

I was about to describe my greatest feat in bacon wrapping, but I remembered that I stole it from Gordan Ramsay anyway. It's best to give credit where credit is due.

It's a fair amount of work, but it is really rewarding. I recall that I did all of the prep work up to the blanching the night before and it made cooking for guests a much more pleasant experience. Instead of using sausage, I stuffed them with baby spinach and goat cheese. Keep in mind that leg quarters are about the cheapest cut of chicken available.
