Historic St. Augustine is a lot of fun.  Bunch of cool shops, oldest schoolhouse in America, Ghost tours.  All pretty good stuff.  Also, there was ripley believe it or not museum there.  I'm not sure if it still exists.

The fort in St. Augustine is cool even if you aren't a history buff.  If you like architecture, take a tour of Flagler College.  The rest of it feels like a tourist trap but I may be a little jaded from living in Florida.
The Don Garlits Drag Racing Museum is in Ocala about 2 hours away from St. Augustine.
You could take a driving course at The FIRM in Keystone Heights about 1 hour away.
If you like weird flavored beers, Tomoka Brewery has a brewpub north of Daytona Beach.
