I was born in '71 and remember a good chunk of the '70's and the cars.
My first "real" car was a '78 Malibu. One prior to that was an '80 Chevette, a '70's design.
Right now we have two '73's in the fleet. One Challenger, one Road Runner.
I've always thought the '70's cars have some great potential. But I always look at cars as raw material, not necessarily as a finished product.
Their are some good looking '70's cars, but you need to look past the crash bumpers, padded landau tops, illuminated opera windows, shag carpet and plaid upholstery. A '78 Magnum with a 6.1 Hemi swap and some updates to the suspension would be a very fun cruiser.
I'd also like to find a Mitsu-Challenger from '78-83 and build one of them up to take to a Mopar show.

My mom had one of those as her first car. Orangey goldish '77 Century with white vinyl interior and a 231.
Forgive me for not remembering if it was an even-fire or an odd-fire engine. I was six at the time, I didn't know that there was a difference. But I do remember that it was a 231.
And I still get flashbacks when I smell vinyl interior.

Look at these awesome interiors
Bonus points for which car they are from.
Well this one is a Lincoln Mark IV
So's the top one. I had two T-birds that shared that chassis. By the time the T-bird gained the square gauge binnacles, it lost the straight-spoke steering wheel. And even with the leather interior, it was never quite so "pimptastic".
I'll also have you know that the first one was a plain-Jane model with velour interior and no options, and the PO modified the 429 a bit. I was taught how to slide a car in that yacht.
how bout this bad boy?

or you could always go with a beetle.
We had, when I was learning to drive, two 1970 Pontiac Bonnevilles (aka my avatar). Both had the 400CID, 4BBL, with Turbo 400 transmission. Wonderful cars. Also a 79 Merc Cougar, which was nice even missing a forward gear.
I have a long list of cars from the 70's that floated through our family. All had their quirks, and most I'd have back in a heartbeat. Though the 78 Mustang II notchback might need a new engine....

I'm pretty sure everybody in that photo is high.
This one is a bit more sinister:
You can't go wrong with soft corinthian leather, even when it's made of mouse fur
