I wonder if these would protect modern plastic headlights from yellowing?

It might. I installed Lamin-X protectors on my '03 TDI when the car was maybe a month old. Both the lights and the film are still clear. That said, I think acrylic lenses made in the last decade of so are generally more resistant to yellowing than ones on cars from the 90's (like my '95 Dodge truck - which isn't even remotely clear anymore).

The ones we installed on the g/f's '03 MINI are clear as well, although one is newer thanks to taking a hit from a retread. The plastic didn't keep the light from breaking, but it did keep the lens intact so the light still worked until it could be replaced.
