Indy's bag is actually a modified British Mk VII gas mask bag. The short wide webbed strap was removed and replaced with the narrower long leather strap. He also actually wears it backwards as it was designed to be worn with the flap facing the body. It is actually amazing how much crap you can get in one. There are still originals out there and modern reproductions as well. I actually have one I use for when I am hiking or doing field research. There are a few small pockets inside including one that is the perfect size for my compass.

honestly I carry everything you do, minus the water and food, plus another type of weapon larger than a knife, in my two front pockets and one rear pocket 99% of the time. I like cargo shorts too, but don't feel they're as necessary to carry all that stuff. Now I wear my pants pretty baggy, so even though I have a lot of stuff in my pockets it really doesn't look like it.

This thread started because I was cramming a pair of Dockers full of things and every time I'd try to get the headset out of my pocket to answer a call for work I'd have to fish around or take something else out to get at it. Either that or I'm uncomfortable sitting because my back pockets are lumpy and/or E36 M3 is digging into my leg.
I also occasionally carry a weapon larger than the knife - and I have a good solution that works for any kind of pant but it's extra storage capacity is not accessible easily either.
I'd love the Util-Kilt thing in a different world... but even butching the thing up with a pair of 45 autos... 'round here you are still a dude in a skirt and you are going to have to fight someone every damn day
In all sincerity, when I take my cargo pants/shorts and iron them, they look quite civilized.

Most of it - I mean... it's keys, money/cards, phone/headset (work necessity) and a knife. I could leave the knife behind but always regret it when I'm tearing something open with my teeth because I did. The only time I don't have it is at at airport.
The cliff bars, charger, water bottles... etc, are for long work travel days when I have to sit on a train or drive long distances.

How tight are your pants? I mean I carry an iPhone in an Otterbox, two small sets of keys, a knife (most days), a wallet and a pen and manage to get by without cargo pants or a bag.
Better pants. You can fit a lot of stuff in Carhartt pockets. And they last! An iPhone in a Lunatik case will slide right into one of the side pockets.
Keys - just carry what you need. Unless you're a janitor that's probably one car key, one house key and one or two for work.
Since I rarely find myself in a situation where I need a spear on short notice, I carry the following for a knife. It's small enough to fit in your watch pocket and the replaceable blades mean you can abuse it heavily.

I'm carrying one more thing than you - a knife. But, I use that every single day so I really don't want to not carry it.
Maybe I just don't like to sit on my stuff or have it jammed in pockets near my junk. Everything "fits" into my jeans or dockers... but it's uncomfortable.

Also when I go to the track I can detach all the rest of my keys from the car key which just has a glass breaker & belt cutter on it (plus the little peg for the keychain "hub").

Ya know... this is just a tangential rant but who decided car keys needed to be huge fat things? You are right - I have one key for the BMW and one for the Chevy, a house key, trailer & gun cabinet locks. The two car keys are one entire source of issue with pocket capacity - they are not only fat and odd shaped but have some sort of rubber coating that sticks to pocket liners. If they were 4 or 5 keys like flat old-fashioned house keys on a simple ring it would be a 1/3 of the volume it is now. As-is they use up one whole front pocket and are lumpy, uncomfortable and easy to accidentally bump enough to set off alarms.

Could you use some sort of belt clip for the cell phone and headset?
If not, those gas mask bag satchels look promising. Add a fedora for the complete effect.
