I've done chops with my kfc clone before. Can verify, amazing. Especially when you make gravy with the drippings. Just make sure your cardiologist is on call.
I have also ended up with those by accident, and also been very pleasantly surprised. Modern pork chops tend to be too lean. I think next trip I will look for butt steaks on purpose. (Also, the "what's for dinner" question has gotten exceedingly old; would be nice to answer "butt steaks, heh heh.")

Up here they're called shoulder steaks or shoulder blade steaks. Chop some fat off and grill or pound flat/bread/fry and they're perfect. They're basically all dark meat, which is the best meat
