The flat map, that you're probably used to seeing, is a terrible projection. The map itself is curved, because they tried to flatted a sphere into a rectangle. Peel an orange and try to do that with the rhind.
The curved flight path in the image above is, in reality, a straight line. It curves with the curvature of the earth, but that is it.
Look at it on a globe, bonus points if you use some string, and you'll understand.
