I have the Acer Aspire as well. I love it. I type full papers on it, and I have gotten used to the keyboard. I got an external mouse and I have an external hardrive for the additional memory.
I run OpenOffice on it, and have no trouble converting documents (some of the fonts don't align though)
I sometimes use it for Adobe programs when I cannot get to my desktop, and it seems to handle Photoshop and InDesign quite well.

You might be surprised how capable the graphics on these little machines are. The Dell uses integrated graphics, the same chip that Apple used in the last-gen MacMini (up until about 2 months ago that is). I watch episodes of Top Gear in HD from finalgear and have no problems with it. I watched the Wolverine movie workprint on it on a flight recently and again, no problems at all. I know others use Aperture and other graphics-intensive programs without any issues either. It's a very capable little machine. If may be worth keeping an eye out for a cheap one in the Dell outlet so she can travel with it, and still use the monitor, kb and mouse while at home.

The netbook thing is rapidly evolving. I have several friends in law school that use the netbooks everyday. Me, I still develop applications and wanted to keep something with a bit more umph.

My brother has a 10" EEEpc. It is configured with dual solid state drives and running real Linux (or maybe he is doing the Remix right now, he doesn't like remix though). it took a bunch of work to get it to where he wanted it because we were doing this last year when the only linuxs were way different than regular Linux distros. He uses his very much the way the OP is planning on using it. For papers and note taking. He loves it for that. He does however have a full blown monster desktop that he/we just built about a month ago to do serious grad school work.
Personally I believe that to be an ideal setup. Take notes on a netbook, do the paper on a real desktop with a large monitor, a full size keyboard, and mouse while sitting at a real desk.
