I’ve thought often about doing the to a MINI convertible

I haven't seen one in a few months, but there were a few Minis converted into pickup trucks for use as Red Bull promotional vehicles.

There was a time, before they disappeared, that the Ford Escort wagons would have made a good candidate for this type of conversion. 

I have said it before and I will say it again, I love this.

Next step, to get people to allow me to rallyx my ute...
