I think this is a great topic since it is so subjective - based largely on ones influences during the formative years. I often dream of having the ability to afford/keep a 2nd car that may at some point appreciate in value. I think if one were an "investor" we'd be talking about all the cars that posters get made of; e.g. Testarossa, Countach, 959, etc.
From a GRM perspective, we want to keep the costs more reasonable and not be afraid to enjoy an autox with your "investment". Here's my list, any feedback:
1970-73 Camaro
1978-81 Pontiac Firebird Trans-Am
1987-91 BMW M3
1988-95 Corvette ZR1
1990-97 Mazda Miata M or 199_ Miata R
1993 Mustang Cobra or Cobra R
Any Porsche 911
1996 Corvette Grand Sport
1999-present Corvette Z06
2002-07 BMW M3
2004-05 Subaru WRX STi
200_-09 BMW Z4 M Coupe
Now those are some cars to lust after. I mean if you are going to dream, even a realistic dream, then at least make them more interesting then some of the other cars listed in this thread. I would add in the 944 and the NB Miata to your list.

This is already happening. A really nice 1979 Trans Am just sold at Barrett Jackson's Palm Beach auction for $43700(!)
and my neighbor just got $5500 for his billion-times-painted/rolling bondo sculpture of a 1971 Camaro on eBay.
