Extreme Experience has discounts on Groupon a couple times a year.
If you want the most bang for your buck, rent a Corvette or look for something unusual on Turo.

Plus, at least at NOLA, it isn’t 3-laps. It’s one relatively slow lap, and 1-3/4 laps at speed before pulling into the pits.

Checked out turo. Had an i8 on there and a 911.
I'd say you should fly someplace for your driving experience.
Pick your favorite track with a local airport, taxi it over, drive the wheels off something fun, go have a great meal, fly home or stay at a local hotel and drive again before flying home.

It's maybe a longer drive than you have in mind but consider http://www.hallettracing.net/school/, they're in Oklahoma west of Tulsa. They do a great job and I think their prices are very competitive (full disclosure: the track and school are owned by family members.)
