Just seeing these mentioned in the ultimate track toy thread. Where can I learn more? Whats the difference between the two? What sort of options do they have for time trials hpde or racing?

If you want a serious info dump you can head over the the NASA-SE forum and ask. There is a very strong Thunder Roadster movement going on in the SE. Mostly in the W2W arena but some people are coming up through the ranks using a roadster once they get solo'd in HPDE.
I've heard of those baby grands as well. Those two links on roadsters just didnt say much about why do some have fenders etc.
Seems like some race out west as well. I saw some for sale with fenders and wings and hayabusa motors vs the original yamaha. But I don't know if you could run them in TT I guess in some power to weight class
Our track runs a class for these. 3 seconds quicker on a 1/4 mile paved oval than the late models. It's an ecotec on methanol. Competitive cars go for $5000.00

Holy E36 M3, if only they weren’t asymmetrical and had some more triangulation side to side, they would be awesome.
What are these things called so we can google some pics with the bodywork off? Could be a fun Locost type project.

The possibilities are endless. I really want to build one of these for road course racing: http://www.pro4mods.com/blog1/ To keep things on topic - http://www.uslegendcars.com/
