I want to go do something with our son (18 y.o.) next week for his final high school spring break. He is a fantastic kid and spending car time with him is the best thing ever!
My first choice would be something that involved actual performance driving. I thought about a driving day at the Porsche Experience Center in Atlanta, but all drivers have to be 21. Boo!
I'm not opposed to flying somewhere if we can find something fun.
Please share some ideas with me!

There's always the 12 hours of Sebring. Finding hotels or an AirBnB might be hard right now; but, you can always camp out. You could even meet some fellow GRMers out there.
Or fly out to California, rent a convertible, and do the PCH from LA to San Fran or beyond. Highly recommend.
Or do a Route 66 road trip experience.

You sound like an awesome dad for wanting to do something like this. Also, I'm last minute spring break planning for my kids as well.
Fly out to LAX or SFO on Friday night and buy a '62-'67 VW Beetle and drive it back. When you get home the kid is proficient in driving stick shift.
Or at least that's the plan in my head with my 20 YO daughter.

I was about to recommend you check out Ocala Grand Prix go-cart track. Sadly, it looks like they shut down. They used to have regular gas carts which were fast & fun. For a bit more $$ you could get a Rotax cart, which was fun AND terrifying (much faster + locked rear axle).
Camping & driving trip up to the Smokey Mountains is something I hope to do once my son has his license & we get an appropriate fun car.
Not car-related...but there's some great places to snorkel & camp in central Florida. For ~7-8 years camping & snorkeling was spring break w/my son. Last I checked my list, we'd snorkeled in 18 or so.
oh man, fly to CA, buy an ACVW new enough to have 12V electrics, drive home. epic.

I just returned from a 5000 mile drive to and from Florida. If you are driving a ACVW, I would suggest avoiding interstates. Most traffic was doing 75-85 mph with the fast movers changing lanes attempting to go even faster.
Fly to Chicago and get your kicks on route 66. And then drive home. Be sure to stop at historic and scenic sites and take lots of photos. Neither of you will do this journey again.

Griffith observatory (just so you'll come to realize how many static car commercial shoots are done there)

If you're looking for actual on-track driving for your son, check out ProFormance Driving School in Kent, WA (near Seattle). The have one day performance driving schools, and I'm pretty sure they instruct 18 year olds. They rent cars, and it's at one of the most challenging tracks in the US, Pacific Raceways.

Yeah, Sebring is just kinda down the road.
If it's more oddball, kitschy stuff you're into, I always recommend checking out Atlas Obscura to see what's nearby–or at least along the way to your final destination.
Thanks to all for the suggestions so far. Based on his schedule and mine, we have a few things.
Next Wednesday afternoon we're heading to Bushnell Motorsports Park for an afternoon of karting. It will be head to head competition for fastest lap time! If anyone in the vicinity wants to join us, we could make it a GRM meet up!
On Thursday, we have tickets to visit The Brumos Collection. Shockingly, neither of us have been yet so we're super excited!

We'd love to but it's ~10 hours away. I've driven it in spirited fashion and he's been on it as a passenger in my X5. One day we'll get up there in a fun car with him driving.
If you come up to KY the NCM track rents Corvettes to 18 year olds. Hit the Tail of the Dragon on the way, go hiking at the Natural Bridge, check out Pine Mountain (you can drive the course of their hillclimb event).

If they could pack that museum up and move it from WPAFB to lets say....anywhere else, that would be awesome. It is an amazing museum that takes a whole week to get through.
