Personally, I'd be interested in a lemon yellow, or some shade of brighter green. But of the available, I'd be interested in the sand color.
The question was "what color would you buy from the options already there", right? Well, for FM I chose Eternal Blue sight unseen for our 2019 with the expectation it would look like the picture I included. It didn't. It was pretty, but it didn't pop off the page like our Soul Red with bronze wheels did.
For my own personal car? Black, because it looks mean and I suspect the car will look exotic debadged and on a good wheel/tire combo. And it's also the best one to use as a base for a wrap, should I decide to do that.

Isn't that the same color they are using on the CX-50?
I suppose it makes sense that it would wind up as an option on other models...
More vivid colors would definitely pull me into the showroom. The current color palette has me way more interested in used cars after some significant depreciation.

I used to have this discussion with the owner of the Porsche dealership I worked at when I was ordering 911's. Do we sell more red, black and white 911's because that's what people want or because that's all we have?
When your production is so limited (as it was in the early 90's) you have to get what you can maximize your profit on. I argued that a unique color would sell even quicker and bring top dollar.
To test my theory he let me order a bright yellow 911 - it sold the first day it hit the showroom, and for full sticker plus some dealer ad-ons that the customer chose.
But it was the last one he let me do......
I would have thought that Miatas in the UK came in colours, but I dunno.
Krypton Green is calling. Stick it on a CX3 if you need to amortize it.

This is a fair point, but if we're going to be all pedantic about it, there are no Miatas in the UK, only MX-5s. So I guess I should have said, "New MX-5 Colour in the UK." I'll do better.
Honda cut the really fun colors from their '23 Grom. You know, the fun little motorcycle that you can put on a credit card? My theory is the eggheads running the show don't want to take the risk of being too flashy and losing a sale when people want to protect resale value in the car. Not saying it makes sense, probably more self-fulfilling than anything, but there's probably a group of decision makers that all saw the same TED talk and cut the cool colors when economic models started looking less good.
Or I'm totally wrong. Either way, beige is not an exciting car color and the soul red has it far outclassed. I'm partial to orange, get it done right and you've got something special.
The best reason I can think of for a sand-colored MX-5 is if you are going to paint it desert camo and install a Paco Motorsports lift kit
