A while back I came across the Rainy Projects channel: It's a young guy who farms out in Oregon; not really automotive related but he's done some really cool modifications to his barn - some impressive steel and wood doors, lighting, a nice deck off the upper level and so forth. There's also a bunch of fabrication and repair jobs around the farm that are worth checking out as well.
They videos are very well made - the videography is good, they're well edited and he's a good host.

I agree with some of the others but one not mentioned is Boost Brothers Garage. They do mostly Porsche stuff. It's two guys trying to build their cars on a budget. It's not the most slick presentation, but they really show how to install parts and fix stuff.

I don't really know the channel (William Longyard?), but this video of Wray Schelin walking through shaping a fender from aluminum is awesome. I'll certainly be checking out what else is on the channel...

The Goodwood channel stuff is great, especially the Revival touring car races.
And whether or not it's great information, ChrisFix totally got me off my butt and gave me a detailing overview I was able to act on, and it was good enough to make me happy about how my car looked inside for a change.

Since a lot of gearheads tend to be interested in firearms, Forgotten Weapons is a fun channel. Even if you don't shoot, it's still interesting to see the history of some strange and obscure guns that have been made over the centuries. He puts out about one video every day, so over the past 4" years he's built up quite a catalog of videos.

I really enjoyed Vice Grip Garage, funny and reminds me of many I've known living back east.
I really wish I didn't live in CA where everything is stupid money and impossible to register, let alone drive.
I've been watching 4wd Action every day during lunch. Very heavy on the product placement but I like watching a "reality" show where the participants don't act like they hate each other's guts.
I watch a lot of whats already been listed but didn't see anyone mention The Fab Forums. I don't remember what tool I was looking for when I stumbled on his "you need this tool" series but its one of the things I watch sometimes when I wake up before the family.

Mustie1 (https://www.youtube.com/user/mustie1) finds "rusty old junk" at yard sales and the like then brings them back to life. Mostly small engine stuff, mini bikes and air cooled VWs.
Fuzzy Dice Projects (https://www.youtube.com/user/FuzzyDicePimp) works on (mainly) GM stuff and does projects in a very GRM way.
Aging Wheels (https://www.youtube.com/user/agingwheels) has a Trabant, a Saab 96, a Wheego and a School Bus for projects.
I wouldn't be surprised if any or all of these guys are already on the board.
