What do you think about these rims

I vote no, mostly because those are pretty iconic mustang wheels, and they really don't belong on a Volvo. I usually don't hold wheels to country specific cars, but those specific wheels are just too much mustang.
I saw a P1800 once on genuine Torq Thrusts (not the Ford Bullitts) that actually looked pretty cool. As for your car, though, if you want those wheels, check out www.thecustomwheelshop.com to find Bullitts made with the 5x108 bolt pattern for T-Birds (and I believe your Volvo shares that pattern). No adapters are necessary.
Ugh. You can do much, much better than that. What exactly are you looking for? Size, weight, aesthetics, price? I'm sure we can help with something a little more, um, tasteful.
Cost mostly. I saw a set of those for cheap and it got me thinking.
If I'm going to do anything to the Volvo it would have to be inexpensive. (It's primarily the family wagon)
I would like about 17" (or so) rims, suspension (lowered about 1.5 - 2.0 inches), tinted windows, etc.
I think they would look pretty good. Get rid of the mustang on the center caps and they would look decent imo.
If you are doing adapters I would look at some PCar wheels or something similar...

Yeah, they look like crap on Miatas and stuff too Adapters+ offset could be a problem though. I got mine on ebay for like $380 for the set. Search on there and you can find cool blank center caps too.
Edgeracing and Tirerack both have some decent wheels in 16 and 17" for sale right now. What is your price range?

Did you think about hitting a u-pull-it for some stock Volvo rims? Those are 5x108, right?
I have a set of 17x7 wheels with 215/45 tires on them.
They are FWD offset and everything (I was running spacers on my RWD wagon)
I got them from a guy with an 850.
