Im looking to find some self adhesive PVC or Vinyl? round stickers, like what you would find under the carpet of a car covering unused bolt holes. Maybe there is a better solution? I have just about finished stripping my shell and Would like to cover any holes that are present after the interior is painted.
Anybody have suggestions?

What about the snap-in body plugs that they make for that?
Paulin, Dorman and Auveco all list them in their catalog or on their website. There are usually metal ones with the cheapest chrome known to man on them or black nylon ones.
We built a Chevy Tracker 4x4 as a favour to a customer a while back. When we pulled all the body cladding off, we plugged the holes with the plastic plugs and then sprayed box liner over top. Worked like a charm.
I've cut vinyl circles for this, but normal sign type vinyl isn't very strong when unsupported. I haven't tried wrap vinyl yet which I think may do better. Super easy to apply and peel back up, but unlikely to last longer than a couple of years.
I've used aluminum adhesive tape to cover holes in my race cars.
I use aluminum tape for the actual sealing, with some duck tape/racers tape over it to reinforce it from ripping. We have this kind of thing in about 20 places on the rally car and they hold up to rally, so should be fine for a street car/race car.

Have you tried to ask in the showroom for special plugs?
I just ordered plastic hole plugs for .18 each to do the same thing in my challenge car.
I have 2 bolt pattern on my wheel. 4x108 and 4x100. On the 4x100, I 80 grit the sides of the holes lightly, on the hub side ,about .75 of inch of j.b weld, to finish, cars hair plastic filler, sanded carefully, then re pain my wheels. Looks much nicer now.
