Just about every derby has different rules, and multiple different classes. Might be best to find your local derby, and contact them. There are FB groups and the WeCrash forum, as well.
All I’ll say is don’t scimp on safety make sure you build as much safety inside as you can in terms of bars, cage, seats etc.
From my one experience, not only does each even have its published rules, it also has its “rules”(nudge nudge, wink wink). My(now ex) BIL ran an 88 Prelude in one & we followed the rules as closely as we could. We arrived to find an AMC Spirit with a full NASCAR cage & heavy tubular steel bumpers front & rear attached to the whole structure. Unsurprisingly they won.
Rule 1 Drink Beer Before Ariving
Rule 2 Switch to Whiskey 15 min. before driving
rule 3 I Don't remember, I'm Drunk thinking about it.
