You reminded me of something Herr Röhrl said once, how he hated Finnish rallies because he wanted to drive a car, not fly one He was a real technician of a driver. His comments got him into a little trouble...
Well tuned inline 6's and v12's up on a song. Same for v8's.
Also love to hear big radial aircraft engines on start up. We used to go to the airport in Oxford in the '70s and watch the "Southern" come in and leave. It was either a dc3 or Martin 404-can't remember. It sounded wonderful and smoked like hell on starting. They always left the far engine idling while they got the cargo and passengers swapped. It left huge puddles of oil too.
Starting one of the K19, K38, or K50 Cummins on a crew boat is something I can't describe. Sounds like a Giant radial or thundering doom from hell. Man it's sweet. Edison Chouest used Cats in their crew boats that sounded really good at full throttle.
there are 2 that absolutely do it for me every time. 1 is the Lexus LFA. 2 is an RB26. I can't afford an LFA, but I get to enjoy the RB often.

Related to that, a friend recently shared a video of his third-gen RX-7 on the dyno. It sounded good–all the brap yet none of the harshness.

On a positive I really dig prewar straight 8s of the Alfa variety.

How about the sound of a Honda starter motor coming to life? It has a unique note (that I know well).
I really like the sound of this. It sounds downright angry, grumpy, yet serious, and the non-synchro tranny is icing on the cake:
