Is Copart the only game in town? Im searching for an annihilated 996 Carrera and, although iaai also sells salvage, I never see Porsches there. They all seem to be at Copart in Los Angeles. I want a badly crashed one because, I assume that if it was moving when written off, the engine is probably still ok (unless it's hit in the rear, of course).

In L.A., Riverside Auto Auction used to have a salvage only lane that runs first thing in the morning. But you'll need a dealer's license to attend that one, and most of the time you just get photos of the cars.
Do some E-bay searches for, salvage or rebuild able.
Most of those are sold by some company that sells that sort of thing. Most are the type that could be re-built. But if you were to contact the companies that are selling those, and let them know what you are looking for you could get lucky...
If you're looking for an insurance claim vehicle, the two games in town are Copart or IAA.

Some old info here, but when I used to live out in CA there were some (one?) big Porsche junkyards in a city/town named Sun Valley. I think companies like this one buy them all up. They had lots of inventory. I think this is the one from google, good luck:

There were quite a few dismantlers in Sun Valley and I used to go there to get VW parts!
