I have no experience with them, but these guys out in Hood River have come up in conversation on occasion. Oregon Motorcycle Rental
Gregor Halenda does some ADV training through MotoCorsa every once in a while. I think it's mostly "big bike" ADV stuff, but I'm sure there's some good information (as well as coffee and pizza) hidden in his class. Might be worth a try.
I'm always looking for more people to ride with in Tillamook State Forest, too. Anything from blue squares to black diamonds. I've given up on dual sporting, but if you're at all interested in a dirt only ride, I'm definitely down to show you around TSF. My woods riding season is just starting now that the fire danger has dipped low enough for the forests to reopen, and I'll be out there pretty much every free weekend until it's miserable and snowy. No worries if you're slow and fall down a lot, that's how I operate as well.

I doubt my DRZ400 qualifies a big bike but I'll check out MotoCorsa.
I just might take you up on the ride offer in TSF. I hear good thing about that place. I prefer dirt riding to pavement anyway. The only reason I got a dual sport instead of a dirt bike is because all the forest service roads require plates.
I'm not sure how close he is to you, but Paul Neff of Cispus Cycles does some schools. He's affiliated with Jimmy Lewis; they kind of alternate locations seasonally. Paul is a great, humble guy who really knows his way around a bike and actually has the credentials to prove it. I've never taken a class from him, but I've ridden with him and learned quite a bit in the process. Not sure if there's anything going on currently since he's training for Dakar with the ARO group and is at Baja Rally now and Sonora here in a few weeks, but he may be doing something after that.
