I'm always looking for good sauces to put on plain rice.
Worcestershire + mustard powder + black pepper. Think 1/2 cup liquid to a tablespoon and a half of mustard and about half of pepper. If you want a little sweet, maybe a squeeze of honey.
Smear all over a pork chop or chicken and bake or grill.
I had lunch at a local Cuban restaurant today. They have some outstanding house made sauces. I was happy to see they sell them by the quart. I will have to pick up a couple of them.

Bulgogi marinade, its does some tasty things to grilled, barbecued or smoked meats, works on veggies too.
Korean red pepper paste too, it's a hot feeling that sticks too every surface in your mouth and lips, and takes a while to go away.

Another good one to put on rice is onion gravy. Just don't make it with Vidalia onions - I tried that once and my wife wondered if I'd dumped sugar in the gravy.
I like Trader Joe's Jalapeno hot sauce. Not super hot and tastes great.

I have too many sauces to list in the fridge but Valentina regular is one of my gotos. Plochmans makes a fantastic chili dog mustard I put on almost everything. Tabasco green jalapeno sauce is what I keep in my work bag for lunch. Chili oil is good for Asian and Italian foods and I live on McDonald's private mild and hot sauces as well.

Salsa Lizano.
It's a thin-ish tan-ish brown sauce that is ubiquitous in Costa Rica. Literally every table at every restaurant. It's kind of sweet, kind of savory, kind of tangy—you could almost call it their ketchup (similar in usage only). Put it on beans and rice. Breakfast. Any meat. Marinate with it. Make a homemade salad dressing with it. Whatever you do, buy the biggest bottle you can, because it goes faster than you think.
Stone ground spicy brown mustard for pretzels. (Or queso).
Arby's sauce on their roast beef.
Marinara on any meat or breadstick.
Is wasabi a sauce? Good stuff.
I'm from the Midwest, so while I like many sauces, I probably have to say that my favorite is RANCH DRESSING!

Frank's Red Hot is my go-to regular hot sauce. I really do put that E36 M3 on everything.
My favorite hot sauces on the planet are from my favorite burrito spot: No Problemo in New Bedford, MA. They have some private label hot sauces made for them: Serrano Lime (green) and Cayenne Garlic (red) flavored.
The green sauce is my favorite, with the red a close second. They are both tasty.

I make my own hollandaise from scratch. It's pretty bitchin.
The secret is to use fresh lemons for the juice, and about 2-3 times as much as the recipe calls for.
Ignoring the OP's request to avoid sauces that are really hot because funny...
Three little pigs brand Carolina sauce has a been a very happy accidental finding.
I can't remember the brand name, but Sams club sells a firecracker sauce that is a very very good blend of heat and taste that goes well on just about everything.

Zombie thread, but I remembered another one.
Dale's Seasoning. It's mostly soy sauce probably, but has some molasses and other stuff in it. Great for a quick marinade on a steak. Don't do overnight or all day, just an hour or so.
Gojuchang is a really fabulous hot sauce for people who don't like hot things.
Ever notice when you eat a jalepeno or something with tabasco, the pain lingers on your tongue for a long time? I hate things that are too spicy because after the first bite you can't taste anything else. Gojuchang gives you the initial spice of pepper, but goes away fast like horseradish. Tastes like pepper, goes away fast.
It's also a fermented pepper sauce, so the flavors are so complex. I like to mix it 2:1 avocado and gojuchang for a sandwich spread.
Trader Joe's has a great Japanese Yuzu hot sauce I can't recommend enough. It has a good citrus/heat ratio, doesn't longer too much and goes great on everything from burgers to pizza to pasta to breakfast stuff.
