This is pretty cool: http://aht.seriouseats.com/archives/2010/05/the-burger-lab-how-to-make-perfect-mcdonalds-style-french-fries.html I've tried it, and it definitely makes really good fries. The prep work does take quite a bit of time, though. I used it in the aforementioned recipe.
