Not to hijack the Turkey thread ot the Food Porn, but I have a recipe I think you'd like. We usually do fresh cranberries, orange and Chambord, but this one is good. Because one relative can't eat skins or seeds, I ran it through a grinder to make a puree, once cooled it gets like a Mousse.
1 Tblsp Gelatin powder
1/2 cup water
2 (12 oz.) packages fresh cranberries
1 cup fresh squeezed orange juice
1 cup lightly colored honey
2 tsp freshly grated orange zest
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
In a small bowl, sprinkle the Gelatin over te water to bloom.
Mix the cranberries, orange juice, honey, orange zest, nutmeg and cinnamon in a sauce pan over medium-high heat. Bring the sauce to a boil, then reduce the heat to medium and simmer until the berries begin to open; about 20 minutes. Pour in the bloomed gelatin and whisk until dissolved.
A stick blender works well to break things up.
I do love cranberries. My wife makes a nice recipe with fresh berries, but I even like the jellied Ocean Spray stuff in a can.
I like it. I, too, am a fan of the cran. My mom specifically asks me to make the sauce for Thanksgiving. My recipe goes something like this:
- (2) 12 oz packages of cranberries
- 1 c water
- 1/2 c freshly squeezed OJ
- 1/2 c Tawney port - a decent one, this year I had a ~$19 bottle of DOW that worked quite well.
- 1 to 1.5 c sugar (depending on how sweet you like it - 1 c makes it quite tart, 1.5c is pretty sweet)
Dissolve the sugar in the water over medium heat. Stir in the OJ, bring to boil, add in the cranberries and port, bring to a low boil. Reduce heat and simmer till the cranberries all pop and the liquid starts to gel, about 10 minutes. Remove from heat, let cool. Chill in fridge for a few hours before eating.
This year I did Alton Brown's recipe:
1/4 cup freshly squeezed orange juice
1/4 cup 100 percent cranberry juice, not cocktail
1 cup honey
1 pound fresh cranberries, approximately 4 cups
It was good but the honey and OJ came thru a little bit much for me. I think I'll water them down 3:1 next time.

Oceanspray in a can is a weakness of mine. I will eat it out of the can with a spoon till I get sick. Don't know why but I crave it year round.

Mock-cherry pie. My mother made it when I was a kid. Cranberries and raisins, no cherries. It's been a favorite of mine (in my mind), although I haven't had it for fifty years.
Can't have a turkey sandwich without the cran!

I love homemade cranberry sauce but...
For some reason, it's not thanksgiving without a quivering, gelatinous, can-shaped cranberry log on the table.

I so wanted to put my homemade into a can to set but I was vetoed.
I grew up with canned cranberry sauce, but my wife started making her own a few years ago, and it's amazing. She adds an apple, lemon zest, orange zest and sugar. It looks nothing like the canned stuff. She won't eat it though, as she doesn't like cranberries.

Cranberries, sugar, water. Cook. Anything else is just adulteration and blasphemy! I love the stuff.
Cranberry relish is definitely food porn. I do zest of an orange, then hit the entire orange with an imursion blender for every 23oz of cranberries and 4 tablespoons of spicy honey.
Heat, tart and just sweet and acidity.

Cranberry juice reminds me of kidney stones. F'dat.
