And at this scale you can't do any fancy flips willy-nilly....read an interview with that guy once, he said that if you don't give it full forward stick while upside-down, the helicopter will dart for the ground and the blades would probably snap off

I am guessing you mean the collective full down. (which to be fair is a "stick")
In a helicopter the stick controls pitch and roll by altering the pitch of the blades at points around the arc. The collective controls the general pitch of the blades, and thus the lift. Pulling the collective up gives you maximum lift, pushing it down flattens the blades for zero lift.
