Salmon at its fattiest is 4-7% fat *before* cooking. Its still a "fatty fish" but compared to other mayonnaise companions, its not what you think. People also put mayo on ham and cheese sandwiches. Ham can have up to 40% fat, and cheese is potentially 60% fat (if you use the gelatinous cheap kind)
I know, and that E36 M3 listed above is gross. Basically mayo is gross, especially your typical soy/vegetable oil ooze that they call mayonnaise these days.
Also I just looked it up, 1 oz (28 grams) of salmon filet after cooking has 3 grams of fat, making the haul 10%. Cooked ground beef ("any type")? 3.9 grams.
Look up Alton browns "pouch principle" episode of good eats. I do my salmon in foil with olive oil, salt and pepper and lemon slices top and bottom. 350 degree grill or 375-400 degree oven for 12-15 minutes and you have a fully cooked but still very moist filet. Also one of the best parts especially since you're dealing with a kiddo is you open the pouch on the plate, eat, then fold it up and toss when done. Minimal cleanup after eating.
