I was thinking about what I was going to cook tonight and I thought simple recipes deserved its own thread. Pictures are important too, so I'll start.

BLT:
Bread
Miracle Whip
One Tomato
Lettuce
One Lb of Bacon

Cook the bacon and assemble how you feel necessary. There is no wrong way.

I know I've shared the picture before, so if you have a problem with it, berkeley you.

Maybe later, my artery clogging alfredo sauce.

MIRACLE WHIP SUCKS.

Try that with real mayonnaise instead of pudding. Also, try it on a warmed flatbread / pita instead of regular bread.

I'll replace quick with easy.

4 chicken breasts
3 serrano peppers chopped
1 medium onion chopped
18oz BBQ sauce of choice

Throw in crockpot on low for 6-7 hours, shred up with fork, throw back in to crockpot to get all the chicken good and covered in sauce.

Even easier: one large pork butt plus enough of a 2-liter of A&W root beer to almost cover in the crock pot all day. Shred with fork and add BBQ sauce and some of the cooking juices over toasted onion bun. Serve with cole slaw.

Also easy: one box of uncooked pasta plus one jar of sauce and an additional jar of water. Mix and bake at 350 covered in foil for an hour. Remove foil and add shredded cheese of choice and continue baking until cheese is browned. Works with meat added as well if that is your bag.

My favorite simple recipie

  • 5-10 eggs

Not "quick", but easy...

Brown several pork chops in a skillet. While doing this, mix one can of cream of mushroom soup with one can of cream of celery in a baking pan. A 9x13 cake pan works well. Once chops are browned, toss them in the pan and spoon a bit of the soup "mix" over them. Cover with foil and bake at 350° for about 45 minutes.

Make a batch of bashed potatoes, remembering to put a medium diced onion in with the taters when you boil them. Then a good bit of warm milk, butter, garlic when you mash them.

I made that last week except I cook it in an electric frying pan, and serve it with rice. The gravy works good on the rice.

Slight variation. Cook broad noodles. Drain and set aside. In the same pot toss in a diced onion and plenty of diced bacon. Fry until done. Add noodles, stir to get greasy goodness on all the noodles and serve with a salad.

Most of those suggestions don't sound simple or quick to me. They do sound expensive and lots of messy clean up after wards. Then again I'm very, very bad and lazy at cooking.

99 cent pizza, open box, microwave 3 minutes, eat from box, wash down with soda. Belch. Throw away box. Wasn't that easy?

Not recommended for 'date nights"

You guys should be posting the number of servings for your meals....I hope you're not eating a pound of bacon or ten eggs all by yourself.

Smoothie: Throw a bunch of fruits (and veggies) in a blender with some orange juice and /or yogurt. Breakfast in about a minute.

Breakfast sandwich: English muffin or biscuit or toast, in the toaster. Microwave sausage patty (or whatever), and nuke an egg in a coffee mug. Takes about 3 minutes and everything is thrown in the dishwasher when you're done.

Not quick, but certainly easy dinner: Cook rice, whatever kind you prefer. Mix in some leftover meat--chicken, steak, or pork chops are my preference. Fish would also work well. Mix the meat in the rice, and then pour melted cheese over it--I prefer white queso nacho stuff. You've got a dinner. You can substitute avacado for the cheese, or use it in addition to.

I did a roast tonight. It's pretty easy, prep is quick and it cooks in a little over an hour.

5 lb roast.

Salt and pepper to taste. It takes more than you think it does.

Slight touch of sugar so it will brown nicely.

Cook at 500, on the rack, for 15 minutes, drop to 350 until a internal temp of 120.

Use a drip pan on the rack below the roast.

6 onions. Peeled, wrapped in foil with a pat of butter and seasoning salt. When you turn the oven down to 350 stick in the onions.

My wife cooked mashed potatoes and green beans.

I ate entirely too much, but damn it was good.

I eat 10 eggs myself. I said 5-10 because sometimes I have a more diverse dinner... but that's not as simple.

I made almost the same thing tonight but with London broil instead of chicken, and no peppers. I served it on a nice slab of garlic bread.

I cook most nights, and a lot of my meals are basically chop up a couple chicken breasts, brown in a pan with something, either some tomato sauce, taco seasoning ect, and serve over rice, pasta or veggies. It's a quick easy homemade meal with little prep or clean up.

Brown 1 pound of ground meat
Slice 1 large onion in 1/2" slices then lay slices flat and cut in half
One quart of tomato chunks (we use the ones we can ourselves)
One cup Minute Rice
1 TBSP Beef bullion powder
1 TBSP Chili Powder

Combine all ingredients in Casserole, cover, and bake in 325* oven for 1 hour.
Makes about 4 servings.

  • 1Lb ground meat, spiced and cooked to taste
  • 2 boxes mac and cheese
  • ~1/2 lb cheese

Make mac and cheese, stir in meat and extra cheese over a low flame.

Slice some tomatoes in 1/4" slices (I like Roma tomatoes and it usually takes 5 or 6)
Whole corn kernels (couple cans or a bag of frozen partially thawed)
Salt and Pepper

In Casserole layer the ingredients as follows:
Ground meat
Corn
Tomatoes Salt and pepper to taste

Repeat to have 3 set of layers
Sprinkle top with bread crumbs/croutons (I used Italian style bread crumbs)
Cover casserole and bake in 325* oven for 45 min, uncover and bake another 15 min.
Makes about 4 servings.

Trouble is mayo kills you about 4x faster. This is coming from somebody who makes popcorn in bacon grease, or in a pinch, lard.
