Sure - they slow down faster when they go uphill. Around here they go uphill and have huge piles of sand at the end to slow them even faster.
Its in fairly deep gravel so putting it in gear and the remains of the parking break should hold it no problem

Usually? The driver gets out and examines the remains of the payload strewn over the hillside... and if has them, puts on clean underwear.
All this runaway truck talk brings to mind a couple of songs:
