Anything Allison Krause does is great. Very talented (and attractive) lady. I'm not a fan of country but there are a few country artists I like and Allison tops the list.
More acoustic but Dynamite Hack covering "Boyz in the Hood" was solid.
Also any of the New Found Glory pop/punk covers are worth a listen.
