It's too late now, but for a few years when I was doing quite well financially, I thought about finding and restoring an Austin A40 Devon for my parents. They had one when they were first married and I thought it would be a nice 3rd car for them and it would be a "Thank you" from me for the life they've given me.
Edit: Just so everyone understands the "too late now", they're both still alive, but the thought of either of them driving is scary. They're in their ninties now.
I have a plan to build an Opel GT for my wife. 07k powered.
I drove one as my first car and when she saw pictures of it she fell in love with them. Ultimately it will be for her but we will both drag race and drive it.
