You could try the thinned rustoleum route w/ a custom color mix if you aren't super worried about repeating it, and clear over for extra durability. I'll probably try this route when I get around to redoing the rallyx car.

The plan was to have a local paint shop mix me a couple spray cans in whatever color I choose, and do a panel or two at a time. I figured the results might not be perfect but should be pretty all right. Time will tell.
For custom cheap color Valspar Zero Rust can be mixed to match at Lowe's. Zero Rust is Valspar's competitor to Rust-Oleum. I give credit to Dusterbd13 for turning me on to this.
Stay silver so as to not have to paint door jambs and other details but adapt in these additional colors from the 1979 Indy Pace Car
$419 will get you all the stripes/stickers but I think I would really just want to replicate the red & orange side stripes.
This is 1980 Cobra. I would choose to keep the hood Cobra off and the side word Cobra off but the stripes are great.
$199 for all. I think this '80 looks great on the mildly updated wheels. Pay special attention to the blacked out side window trim and louvers. This is what makes it all "pop".
I'm at work so I can't see 99% of the pics but I submit this for your consideration:
Dark Highland Green
Medium to light blue will go well with the maroon interior, and you can even use a dark maroon in place of the black accents. One panel at a time you do not want a metalic, or pearl like Duster says. He's correct about the light color hiding imperfections too. With a different interior I would go seafoam , but it clashes bad with the maroon.

Grabber blue was my first though too. It's the greatest Mustang color ever. Grabber orange is a nice color too. I would do one of those two or just grey primer if you aren't going to be cool.

But wait! This is 2019! Shouldn't you just clear over that, and call it "patina"? I hate the term, and the fact that it's just an excuse to not fix crappy looking paint, but I love the fact that people think the crappy looking paint on my cars is intentional, and cool.
Just kidding. Paint the berkeleyer. :)
My first vote is for original silver with the stripe kit. It also works with your original interior. It's way more work to do a proper color change.
Otherwise Kona blue is an awesome choice. You would need to find a grey or black complete interior though. I think there is a 4 eyed fox project car on here that got painted Kona. It looked great.
