Looking to get back into rallycross and was looking at some DSG equipped Jetta, Golf, Beetle or A3s to possibly be the new candidate. Maybe even a TDI. 
 

Has anyone had any experience with these? Good? Stuff that needs to be done to them? Or completely avoid them?

Not specifically a DSG, but one ride in a twin clutch Evo opened my eyes and made me realize how limiting a three pedal transmission is.

Like, an upshift and downshift in a 50 foot long "straight" without losing time to the shifting process.

IIRC you will not be able to left foot brake.  I don't do this, even in a front driver, so this doesn't bother me but others may run into issues.  Not sure if VW allows it if you apply the brake before the accelerator or if it shuts the throttle no matter what order you apply the pedals.

No experience with dsg, but left foot brake is pretty essential to get a fwd car to rotate in Rallycross. You can definitely still have fun no matter what you bring, but if you have the option of a manual I would go for that.

tdi would be interesting. We've tossed the idea around because the down low torque might be helpful to accelerate out of corners, but never went through with it. I think most fwd just supercharge for more torque everywhere

Rallycross always has 18mph sweepers which are slightly to slow for 2nd gear and hard to modulate the throttle in 1st gear.  The dsg fixes the problem.

The reason you don't see more is dsg cars are modern.  They are heavy and don't fit 15" tires.

The mk7 golf with the active diff looks like an interesting choice for stock class.  I think it had some issues in autocross with un-defeatable traction control in the stock ruleset.  I am not sure if that rule translates over but it would be worth looking at before you buy.  Also check whether the diff and dsg work if you pull the abs fuse.

If you don't have a good diff, too much torque is a bad thing for a front driver.  Wheelspin is way too easy to get.

When I rallycrossed my own front drive cars, they either had 100hp or less, or I turned the boost all the way down with a manual controller in order to make them more drivable, which brought it down to about 110hp.  Even on rally tires.  But this was also with open diffs.

Didn't Gwen Habenicht use a DSG Audi TT to win an autocross D Street National title in 2014?

First I will put down that I stand up when I pee. Let that trigger you however it triggers you. Second, our audi TT DSG from 2004 was everything you'd want from a DSG automatic. 3.2 and shifted on point when it was is Sport mode. Gear lever or paddles I could have not shifted faster. Thirdly, I still stand hen I pee but that transmission made me rethink my standing position.

We're talking about trannies and you post this. What, exactly, are you using to shift gears? Have you been in the naughty films shifting the trannies, by chance?
