So I may be putting a lot of miles on the Jeep in the near future and I haven't replaced any fluids other than oils changes since getting it with 127k on it in February (it's got 138k now). It's probably a good idea to replace all the fluids in the driveline in preparation.

It's a 2007 Grand Cherokee Limited with the 5.7L Hemi and Quadra-Drive II full time all wheel drive with ELSDs. I'm thinking transmission fluid and filter change, front and rear differentials, and transfer case.

So do I go with all Mopar fluids,  or splurge and use Redline? Or is there something else I should use?

Oh yeah, here's what the Rwdline sure recommended. The GL-4 is for the NV245 and the GL-5 was for the diffs:

Redline makes some great stuff. I'm especially a big fan of their gear oils and manual trans fluids. I've had multiple vehicles that had weird synchro issues (especially my old Mazda 3's 6-speed) that vanished when I used the appropriate Redline fluid. Their stuff would be a good choice if you want something a little "better" than OEM.
