That's the water thermoswitch. It's a one wire sensor that turns on the fan.

Ok, follow up question/problem:
On the left is the broken sensor from the thermostat housing, on the right is what I received - and what everyone shows as a “coolant temperature sensor”. So apparently I’m not searching for the correct part.
Does anyone know the p/n for the part on the left(also pictured above)?
I used the parts fiche at Jim Ellis Mazda. It looks like part number N35018840 .
It's a pricey little fellow.
